In a large bowl, combine grated sweet potato, grated apple, and lime juice.
Add cinnamon, nutmeg, salt, beaten egg, and sorghum flour; mix until a thick batter forms. Adjust with more egg if too dry or more sorghum flour if too wet.
Heat enough avocado oil to coat the bottom of a large frying pan over medium heat.
Scoop a heaping tablespoon of batter into the pan and gently flatten with the back of a spoon or spatula, leaving space between latkes.
Cook until bottoms are golden brown, then flip and cook the second side until crisp and golden, about 5 minutes per side. Transfer to a cooling rack.
Repeat with the remaining batter.
Serve warm, plain, or topped with a spoonful of sour cream and a handful of broccoli sprouts.
