Ingredients
- 2½ cups grated sweet potato (about 2 medium)
- ½ cup grated apple, skin on (about 1 small apple)
- 1 teaspoon lime juice
- 1 teaspoon cinnamon
- Pinch of nutmeg
- ½ teaspoon salt
- 1 large egg, beaten
- 5 tablespoons sorghum flour
- Avocado oil, for shallow frying
Instructions
- In a large bowl, combine grated sweet potato, grated apple, and lime juice.
- Add cinnamon, nutmeg, salt, beaten egg, and sorghum flour; mix until a thick batter forms. Adjust with more egg if too dry or more sorghum flour if too wet.
- Heat enough avocado oil to coat the bottom of a large frying pan over medium heat.
- Scoop a heaping tablespoon of batter into the pan and gently flatten with the back of a spoon or spatula, leaving space between latkes.
- Cook until bottoms are golden brown, then flip and cook the second side until crisp and golden, about 5 minutes per side. Transfer to a cooling rack.
- Repeat with the remaining batter.
