Now you’ve got five amazing foods your brain will love, and one it probably isn’t going to love. Now, it’s true. There’s an amazing connection between the food you eat and your brain health. So today I’m going to share five amazing foods your brain will love, and one, it probably isn’t going to love. Many of them, you probably already have in your kitchen.

(03:43):
All right, first up blackberries. Believe it or not, blackberries have far more polyphenol content than blueberries. And yes, it’s true that blueberries have really nice polyphenols and studies in America have shown that eating blueberries increases the amount of polyphenol substances in your blood. But for bang for your buck, blackberries have far more polyphenols than blueberries, and they have a mature sugar content. And as almost all of us now know, sugar is one of the biggest enemies for your brain health.

(04:30):
Now, how do polyphenol support brain health? Well, there’s actually multiple mechanisms, but one of the things that I stress in unlocking a keto code is that polyphenols actually make the mitochondria in your brain healthier, and more stimulated, and uncoupled. And today we’re not going to talk about uncoupling mitochondria, but quite frankly, the more you uncouple the mitochondria and the neurons in your brain, the healthier your neurons will work, and the better your brain will be. Now wait a minute, Dr. Gundry, I thought we weren’t supposed to eat fruit. Well, you’re not supposed to eat fruit that isn’t in season, but when you eat fruit, you want to look for the highest polyphenol content of fruit, and that’s blackberries. But please just like everything else, eat these in season and eat organic blackberries.

(05:36):
All right, basil seeds. Now most people think that chia seeds are great for brain health. That’s because chia seeds contain a short chain omega-3 fat. Now, don’t get me wrong. I’m a big fan of short chain omega-3 fats and I write a lot about them in unlocking the keto code. But here’s the deal, your brain does not contain short chain omega-3 fat. Your brain contains long chain omega-3 fat, primarily DA chain, EPA, and DPA. These are all long chain fats. We lack the enzymes to connect short chain omega-3 fats and make them long chain omega-3 fats. We’re basically not a fish. So, the idea to eat chia seeds to improve your brain health is quite frankly, a misconception. In fact, as I’ve written about in my books, research shows that eating chia seeds actually increases a marker of inflammation called C reactive protein. And the last thing you want for brain health is inflammation. In fact, as I write about in unlocking the keto code, neuroinflammation is one of the biggest factors in cognitive decline.

(07:19):
So my advice, ditch the chia seeds, use basil seeds instead, because basil seeds will give you the fiber that you’re looking for, but it’ll also give you a great kick of polyphenols, which will help your brain, unlike chia seeds.

(07:41):
Number three, coffee and espresso. So coffee is a great source of polyphenol. Studies have shown that people who drink up to five cups of black coffee a day have dramatically reduced Parkinson’s and dementia than people who don’t drink that much coffee. Polyphenols in coffee are great for improving brain health through the mechanisms that I talked about previously. And here’s the rug, unfortunately, adding milk or cream to your coffee binds the polyphenols so that they’re no longer available to you to use. That’s why interestingly enough, tea also has a number of great polyphenols for your brain. The British used tea, but they put milk in their tea. The Japanese and Chinese drink tea, but they don’t put milk in their tea.

(08:46):
It’s only the Chinese and Japanese who get the benefit of drinking tea. The British lose that benefit because they put milk in their tea. So the next time you’re looking for that coffee creamer or the milk and cream to put in your coffee, because you heard Dr. Gundry tell you how great coffee is for you, you just negated that coffee ability to help you, because you’ve added that milk product. Sorry about that.

(09:12):
Number four, dark chocolate. Now believe it or not, I eat dark chocolate every day, usually 85% to 90% cocoa. Why? First of all, chocolate is loaded with polyphenols. Interestingly enough, studies done by the Mars corporation, yes, the Mars candy bar corporation, show that cocoa based polyphenols dramatically improved brain function. In fact, there are several supplements available that contain cocoa polyphenols that have actually been shown to improve memory. I take one myself.

(10:04):
So, chocolate is great for your brain, but remember, more bitter, more better. The more bitter the means the more polyphenols. So look for chocolates that’s got at least 72% cocoa. Also, look for chocolate that doesn’t have any milk additive. Same reason here, adding milk to chocolate totally binds polyphenols in chocolate. So that’s why unfortunately milk chocolate is useless for us. Also, if you’re looking for chocolate, avoid Dutch or alkalized chocolate. Dutching was discovered as a way of taking the bitterness of a chocolate and as you might guess, the Dutch developed this technique and it adds alkaline to cocoa. So if you see Dutch chocolate or alkaline chocolate, throw it away. It has none of the health benefits. Finally, we’re getting chocolate products that have Stevia like Lily’s, allulose or Monk fruit as the sweeteners, so you can really dramatically reduce the sugar content in chocolates. And in fact, and I had no relationship with the company, last night, I had 85% piece of Lily’s dark chocolate as my chocolate of the night. So these things are available. They really help your brain health.

(11:47):
Number five, eggs. Now, not just any eggs. What you’re looking for is pasture or omega-3 eggs. Many people, including several of my friends in neurology, refer to them as a cognitive multivitamin. Now, this is a very controversial area and I don’t go into all the controversies, but eggs contain lots of vitamin B12. They do contain short chain omega-3 fatty acids, but not long chain. Some of the omega-3 eggs do have a healthy dose of DHA. And if you’re looking on the label, look for DHA on your omega-3 eggs. They are available.

(12:34):
They also contain choline. Choline is an essential compound for your brain. But before we jump on the Choline bandwagon, remember that many of us have gut bacteria that convert Choline into a compound called TMAO that I’ve written extensively about that may actually impair vascular health. Some of us make these bacteria, some of us don’t have these bacteria. But, so choline is a mixed bag. Just remember that many of us who take choline supplements thinking that we’re going to improve our brain health, they actually be hurting our brain health, and I unfortunately measure this in my patients and we could see the effect in some patients of choline in eggs and supplements actually increasing their TMAO.

(13:34):
So, if you want experiment with eggs as a source of choline, ask your doctor to run TMAO test on you before and after, and see what happens. Don’t overdo eggs. Be careful because of this factor. And again, make sure they’re pasteurized or omega-3 eggs. How many eggs? Quite frankly, I rarely eat eggs anymore, particularly in the United States, I eat them in Italy and sometimes in France, when I know where the chicken came from, but eggs are not the most beneficial thing if choline is a problem for you.

(14:16):

Four popular foods that absolutely destroy your gut, and you’ve heard me say it before all disease begins in the gut, which is why caring for your gut is one of the most important things you can do for your health. So today I’m going to share four widely used foods that could actually be wreaking havoc on your gut microbiome and the wall of your gut, especially if consumed in large amounts.

(19:54):
So, let’s get started. First off, artificial sweeteners. Almost all products with a label reading sugar free are light contain artificial sweeteners like saccharin, aspartame, sucralose, which are practically poison. You know them by brand names like Sweet’N Low, Equal, and Splenda. The problem is that these sweeteners actually kill gut bacteria. A Duke University study in 2007, showed that one packet of Splenda, that is sucralose, could kill off about 50% of your gut bacteria. One packet. This can lead to incredibly bad things happening to you and your gut microbiome every time you do it.

(20:39):
I did an experiment showing exactly how it works. You can actually check it out right here on my YouTube page. When you kill off good bacteria, you populate your gut with more and more gang members or bad bacteria. These guys actually hijack your brain and your taste buds, and actually make you look for high calorie, high sugar, high fat foods. And the remarkably weird thing about these bad bacteria is they actually extract more calories from the food you eat and deliver it directly to you. What you want, and what we talk about is, you want gut bacteria that actually extract the food that you eat for themselves so that you can actually eat more food and actually lose weight. That sounds pretty good. So when you’re looking for sweet, look for healthy sugar substitutes, like allulose, which is my favorite, non GMO allulose, and Monk fruit. If you want to use stevia, that’s fine, but again, allulose is now my new favorite. More and more products using erythritol are safe, but use in a small amount. A lot of my patients, erythritol really gives them some GI upsets, and while it used to be one of the better ones, there’s so much better ones on the market now, like allulose. I want to steer you towards them.

(22:17):
All right. Popular oils like corn and peanut oil. Now I know you may not be buying these bottles of oils at the grocery store anymore. Hopefully not, but the truth is, if you buy packaged food or takeout, you’re still consuming them in huge amounts. Almost all restaurants use these industrial extracted oils because number one, they’re cheap, a lot of them have a low frying heat of smoke temperature. That means they won’t smoke up the room when you’re frying and you can use them over and over again, even though they accumulate harmful compounds.

(22:58):
But the problem with these are number one, they are primarily short chain omega-3 fatty acids, which although this essential omega-6 fatty acids are essential. We’ve been bombarded in our food system with more and more and more omega-6 fats and it’s balance between omega-3 fats and omega-6 fats. That really make a difference. Way back when we actually had a pretty good balance between omega-3 fats and omega-6 fat. Now in the old days, we used to have two to one or three to one, omega-6 to omega-3 ratio. Now in America, we have about 30 to one ratio between omega-6 fats and omega ones. No wonder we have so much more information.

(23:53):
The other problem with these oils is that they contain lectins, and lectins, as you know, are one of the best ways to cause leaky gut. Now, leaky gut is exactly what it sounds like. Normally you have a closed intestinal barrier between everything you swallow on one side and you on the other. 80% of all your immune cells or white blood cells live against your gut, because this is where trouble can come through. With leaky gut, the seal between the various cells that line your gut is broken and work from Alessio Fasano, who’s now at Harvard has shown that lectins, including gluten, which is a lectin, are one of the main causes of the gut. So, banish these seed oils from your diet and just remember almost every time you’re getting something that’s been prepared, packaged, or from a fast food restaurant, is going to be containing these no-no oils.

(25:03):
What are the best oils? Well, quite frankly, olive oil is still the lowest oxidizable oil for cooking. Yes, olive oil has a low smoke point, but smoke has nothing to do with oxidation, so you’re still better off of olive oil. Avocado oil, Sesame oil, and one of my favorites, Perilla oil. Perilla oil is the preferred cooking oil in Korea and China. It has a very high smoke point. It has a lot of really interesting antioxidant compounds, but please stay away from the industrial seed oils and really be careful about your fast food purchases.

(25:49):
So, read labels carefully. If you see corn oil, peanut oil, cotton seed oil, those are the oils to run away from. Soybean oil, partially de fatted soybean oil, in general, skip the oils, particularly in restaurants.

(26:10):
How about oats? Well, sorry. Oats are lectin bombs. Oats contain a protein that cross reacts with gluten, which means, even if the oat package says gluten free, that doesn’t mean that your immune system doesn’t recognize oats as a foreign substance. So, oats are mischievous as my oldest daughter who’s a horse woman likes to remind me, dad, oats are good for one thing and that’s for fattening horses for winter. And I assure you, you and I are not horses, and we certainly don’t need to fatten for winter. And yes, this includes healthy oat milk, oatmeal, and oat flour. Not to mention, almost all of our oats in the United States are sprayed with Roundup, glyphosate, and multiple studies have documented that almost all oat products sold in the United States, including healthy oat bars, including healthy oat cereal, and even several organic oat products have glyphosate in them. And as you know, if you want to destroy the wall of your gut and kill your gut bacteria, glyphosate is the way to do it.

(27:37):
So oats, even if it says organic, gluten free, are absolutely a no-no, because of the cross reaction with protein in oats with gluten. So all of you folks eating your gluten free oats, thinking you’re safe in terms of celiac disease and leaky gut, I got news for you. We see this all the time in our office when we look at people who are eating a healthy oat diet and they’ve got dramatic leaky gut.

(28:14):
All right, fourth item, animal protein. Now truth is, carnivores live shorter lives. There is not been a society ever discovered that eats a high protein diet that has exceptional longevity. I’m sorry. I’ve looked for it. I’ve asked my carnivore diet guests to find me one. There aren’t any. In fact, the blue zones, those areas of the world with the longest longevity and health spans, including Loma Linda, California, where I was a professor for half my career, all of these areas, one of the universal truths, is that there’s very limited animal protein eaten in any of these areas. Animal protein stimulates insulin like growth factor, which ages us rapidly. Plus unfortunately, beef, lamb, and pork, contain a sugar molecule call Neu5Gc, which has been shown to cause autoimmune attack on our blood vessels and has also been associated with tumor growth.

(29:35):
So lastly, most animals that we eat in United States are fed corn and soybeans and other lectins. So you are what you eat, but you are with a thing you’re eating ate. So if you want to get yourself a double dose of trouble, eat animal protein that’s been fed corn and soybeans, like most are in the United States and you’ve got multiple reasons why you really want to cut down on animal protein. If you’ve got to eat it, look for a pasture raised poultry or 100% grass finish grass fed beef. Look for the word grass finish. There’s no labeling law that requires how long you have to feed a cow grass before you can actually call it grass fed, so buyer beware.

(30:32):
You’ve heard me talk about chocolate a lot. It’s one of my absolute favorite foods. And in my opinion, it’s one of the most delicious foods you can eat on the plant paradox. In fact, it’s something I eat every single day. But, even after giving you the go ahead to eat plenty of bittersweet chocolate, I’m still getting lots of questions about chocolate. So today I want to put together a quick chocolate, 101 for you. But first I want to ask you a question. Are there any other health topics you’d like to know more about? So if there’s anything you want to know, go ahead and leave a comment below. Now I know you’re here for the chocolate, so let’s get right to it.

(31:31):
Chocolate 101 with Dr. Gundry. First of all, what kind of chocolate can you eat? The best kind: bittersweet chocolate. It’s like I always say about leafy greens and other vegetables, more bitter, more better. And when it comes to chocolate, it couldn’t be more true. Your chocolate should always be at least 72% cocoa. Personally, I’d prefer it to be above 80% cocoa, though I understand that’s too bitter for a lot of people. But wait, chocolate has sugar, right? Well, if possible, look for chocolate that’s sweetened with stevia or Monk fruit. Lily’s is a great brand, but if you’re not able to find stevia sweetened chocolate, that’s okay, just buy the most bitter regular chocolate you can handle. There’ll be a little sugar in it, but the amount of sugar is pretty negligible and if you’re only eating a little square of chocolate a night, it’s not a huge deal. The benefits will outweigh the drawbacks.

(32:38):
Is there any milk chocolate I can eat? Well, the truth is I haven’t come across much plant paradox approved milk chocolate. For one, milk chocolate is significantly higher in sugar than dark chocolate. But even if it’s stevia sweetened, milk chocolate is often made with milk that has KCNA1, making it terrible for your health. Plus, the milk will bind to the polyphenols in chocolate, ruining those health benefits. Now, if you’re running around Southern Europe and you find a stevia sweetened chocolate made in sold there, chances are you’ll be okay, but remember, you won’t get the polyphenol benefits. And if you do find that chocolate, write in and tell me about it.

(33:28):
What about white chocolate? There’s exactly one place that white chocolate belongs, and that’s the trash can. Not only is it loaded in sugar, but it’s got none of the health boosting polyphenols that dark or even milk chocolate has. Plus, white chocolate bars have about as much milk as milk chocolate, sometimes even more. And if it’s A1 milk, that just spells trouble for your health, so that harmless looking white chocolate bar is simply a lose-lose for your body, especially your gut. And in my opinion, it tastes pretty lousy too.

(34:08):
Can I eat cocoa butter? If you can find pure, raw cocoa butter, absolutely. Like coconut oil. It’s just fine to eat in moderation and adds a really interesting flavor to foods, like adding just a hint of chocolate, but no heat. But if you’re into baking, it actually makes a pretty good butter substitute. Good news, if you’re a vegan chocoholic, and you can cook with it like you would any other oil, but like I said, it adds a pretty interesting flavor. One you may or may not enjoy, but it’s rich in some pretty interesting phytochemicals and fatty acids. So if you’re into the flavor, go ahead and add it to your pantry. Just remember, when it comes to healthy fats, nothing, and I mean nothing beats olive oil. So you shouldn’t use cocoa butter instead of good old extra virgin olive oil, but you don’t have to avoid it either.

(35:12):
What’s the story with cocoa powder? For some reason, people are really confused about cocoa powder, probably because there are so many different varieties on the market these days. And when it comes to supporting your health, one type really is a cut above the rest, and one should absolutely be avoided at all costs. What should you avoid? Sweetened cocoa powder? You know, the kind people use to make hot chocolate. For one it’s loaded in sugar. One popular brand has over 30 grams of sugar in just a quarter cup of powder, making it almost all sugar. Plus, you find cocoa mix or powdered cocoa rather than actual cocoa powder. You’re getting more than just chocolate and sugar. That’s because a lot of these shelf stable mixes have A1 milk in them, as well as stabilizers and other additives that are often made from ingredients like soy. And if that weren’t enough, most of these mixes are made with the wrong kind of cocoa powder, dutched cocoa. You may also see it labeled as European style cocoa. alkalized, black cocoa, or Dutch process. And Dutched cocoa is cocoa that’s treated with an alkaline solution to neutralize its pH and mellow out its flavor. It also makes for a richer color.

(36:46):
Now, a lot of people find Dutch cocoa to be delicious, but there’s a problem. That alkaline treatment does more than just change the pH of chocolate. It zaps all the stuff that makes it healthy too. So, you won’t enjoy the incredible benefits that come from eating dark chocolate. So what’s the solution? Natural cocoa powder, also known as non Dutch cocoa. Good news, not only is the stuff even more delicious than Dutch cocoa in my opinion, but here in the US, it’s more widely available. Brands like Hershey’s and Ghirardelli both use non Dutch, natural cocoa powder. It’s a little lighter in color, but don’t be fooled. The flavor of natural cocoa powder is complex, robust, and fruity. It’s fantastic and because it hasn’t been scientifically tampered with, it’s incredibly nutritious, too. Unsweetened cocoa powder is one of the highest polyphenol foods on the planet. Just remember, chances are, you’re going to want to add a little bit of Stevia, Monk fruit, or xylitol to anything you’re cooking with cocoa powder. On its own, it’s pretty bitter, like an unsweetened chocolate bar, but it’s great in a chocolate almond cake, believe me.

(38:15):
Now, before I go, let me answer one last question. How much chocolate can I eat? The answer? Have a little piece, just remember, more bitter, more better. And if it’s less than 72%, cocoa, it’s a sugar bomb and best avoided.

It’s time for the audience question of the week. This question comes from Oscar Alvarez on YouTube regarding my video on common water mistakes. He says about the plastic, what about cooking sous vide? Is that plastic harmful as well? This is a great question, Oscar, and quite frankly, I was very enthused about sous vide cooking a few years ago, but I’ve totally abandoned it, and here’s a heads up. A personal friend who’s a James Beard winning chef no longer does it either. Now, I have no idea about whether these compounds from the plastic leech into these foods, but it certainly happens with everything else and I think with the combination of heat, this is probably something we really should consider avoiding, which of course, I’m doing now. So, thanks very much. That’s a great question. And that’s my opinion.

Now time for the review of the week, this comes from Haldor via YouTube about my video on the surprising benefits of vitamin D. Great video, Dr. Gundry, I have met way too many doctors that do not know anything about vitamin D3, keep up the good work. Well, thank you, Haldor. The more I research vitamin D and believe me, I’ve read every paper on vitamin D, the more I’m impressed with its health qualities, it’s longevity qualities, it’s anti-cancer properties, and one of the frightening things that I see in treating my cancer patients, is every one of their oncologists, the first thing that happens is they tell them to stop their vitamin D because it’s too high. And if they would read the work from the University of California, San Diego, that is the last thing they would say, because the evidence of vitamin D deficiency and association with cancer is scary, and the association of high dose vitamin D with cancer prevention and cancer regression is equally impressive.
