Miracle Noodle Cacio e Pepe
Serves 2
- 2 packets Miracle Noodle spaghetti or shirataki spaghetti, prepared the Gundry way
- 1 tablespoon extra-virgin olive oil
- 1 shallot, minced
- 1½ teaspoons freshly cracked black pepper
- 1 tablespoon minced fresh rosemary
- ¼ cup warm water (if using Parmesan) or coconut milk (if using nutritional yeast)
- ½ cup shredded Parmesan, pecorino, or nutritional yeast
Prepare the noodles and dry them well in a pan. Set aside.
In the same pan, heat the olive oil over medium heat. Add the shallot, pepper, and rosemary and cook, stirring frequently, until the shallot is translucent and tender.
Add the water and Parmesan to the pan and cook constantly, until a creamy sauce forms. You may need to add a bit more liquid; do it a tablespoon at a time, until the mixture is thick and creamy.
Toss the sauce with the noodles and serve!
If dairy is restricted, why is parmesan cheese allowed since it is concentrated milk product.
I actually prefer sheepskin milk Pecorino Romano Cheese. Is this acceptable as well?
