Not sure if it’s possible for you to get him on your show, but Lars Frölander (https://en.wikipedia.org/wiki/Lars_Fr%C3%B6lander) would be a perfect fit. Known as the Avocado Man for eating up to 12 avocados a day, and cutting out milk, and drinking large daily green smoothies with spinach and kale, he overcame chlorine allergy to win the Gold Medal at the Sydney Olympics 2000 in the 100 meter Butterfly swimming.
He swam for some US University (I don’t know which one) at some time, to which he might still have ties, and does public speaking and podcasts in Sweden nowadays.
