Indian Spiced Cauliflower

Ingredients:
- 1 tablespoon avocado oil
- ½ teaspoon whole cumin seeds
- 1 large red onion, minced
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, finely grated
- 1 teaspoon coriander
- 1 teaspoon turmeric
- ½ teaspoon garam masala
- ½ teaspoon sea salt
- ⅓ cup water
- 2 sweet potatoes, peeled and chopped
- 1 head cauliflower, cut into florets
- 2 tablespoons fresh cilantro, chopped
Directions:
- Set your Instant Pot to sauté. Add avocado oil and cumin seeds, toasting until fragrant.
- Add the onion and cook for 2–3 minutes, until softened and translucent.
- Stir in ginger, garlic, coriander, turmeric, garam masala, and salt. Cook until aromatic.
- Deglaze with water, then add sweet potatoes and cauliflower. Stir to combine.
- Seal and cook on high pressure for 1 minute.
- Release pressure, then strain excess liquid or sauté to reduce.
- Finish with fresh cilantro and serve warm.
